Meat is probably the most important ford obtained from flesh of beef, veal, mutton, lamb and pork. They are domesticated primarily to be slaughtered and eaten. It is a good source of protein, which we need for out body growth and repair.
The animals for meat are slaughtered as per the butchery steps. For that, they are inspected and selected to disinfected and quality meat. At the first step, they are given rest (20-24 hours) and plenty of water without feeding any thing. It helps in easy bleeding and retards bacterial infection. The second step is stunning (unconscious) the animal by electric shocks or putting them in a carbon dioxide chamber of be easily killed. And the third step is flaying and cleaning the killed animal.
After slaughtering it is generally hung of between 3-10 days depending on the type and quality of the carcass. This allows natural enzymes to tenderize the flesh. The carcass of beef is split into two sides and those of lamb, sheep, pigs and calves are left whole. Then the carcass if kept in cool room before being sent to market.
Meat cuts are composed of muscled, tissues, fat and bones. The proportion of composition depends on:
-Type of animal
-The age of animals
-The type of food on which the animal lived and lastly, the part of the carcass from which the cut is taken.
By their nature and composition, certain cuts of meat are most appropriate for certain methods of preparation. It is very essential for the catering personnel to know how to choose correct meat cuts and the recommended temperature for their preparation.

Concept and meaning of tourism
The word tourism is derived from the French word ‘Turisme’, literally means to tour and travel. Tourism is the process of temporary movement in the particular destination undertaken by the human that starts from one point and ultimately ends at the point where one started the journey from. It is a phenomenon of human character related to tour and traveling at a particular area, locality, sites, places, etc. But traveling without any reason for temporary stay is not termed as tourism. It is something about people who travel away from their familiar home environment for many reasons. In order to know the meaning of tourism, one should also know the simple ideology of tour.
Tour
Tour is derived from the Latin word toumel/tourness (Greek word), which refers to circle. The oxford dictionary relates tour as a journey for pleasure, during which one visits several areas. The suffix “ism and ist” refers to the movement around the circle by the people. Like a circle, a tour represents a journey that is a round trip. Therefore, one who undertakes such a journey is called tourist. The word tourism came to be added in the English dictionary only after 19th century.
According to the Tourism society to United Kingdom, “tourism is the temporary movement of people to destination outside of the places where they normally live and work, and their activities during their stay at these destinations”
In 1942, two Swiss professors, Walter Hunziker and Kurt Kraft had defined tourism as, Tourism is the sum of phenomenon and relationship arising from the travel and stay of non- resident, in so far as they do not lead to permanent resident and are not connected with any earning activities”
In 1968, international Union of Official Tourism Organization ( IUOTO) and World Tourism Organization (WTO) had defined tourism and tourist as- The tourists are temporary visitors staying at least 24 hours in the country visited and tourism is the living activities at the spotlight” The purpose of journey can be classified in the following headings:
Leisure
Tourists/visitors who travel to destinations with a reason to spend time to get enjoyment and entertainment, and working nothing in professional way. The activities of the movement may be planned and managed as per the likes and interest for pleasure and fun of individual desire. For example, recreation, holiday, health, study, religion, sports, education, etc.
Business
Tourists/ visitors who travel to destinations with a reason to spend time to get optional enjoyment and entertainment, and working something is professional way. For example, business meeting, convention, conference, seminar, any special mission, etc.
Mr. Valen L. Smith’s definition is internationally recognized, particularly in the academic sphere. According to him. “A tourist is a temporally leisured person who voluntarily visits a place away from home for experiencing a change”.
A United Nation conference held in Rome in 1963, on International Travel and “Tourism” had recommended the word visitors in two different categories:
1. Tourists
2. Excursionist
Tourists are the people who travel to destinations for a variety of reasons and spend more than twenty four hours and less than one year consecutively. Excursionist is a temporary visitor, staying less then twenty four hours in the destination visited and not staying overnight.

There is no hard and fast rule as far as the division of tourists is concerned. Since the inception of the concept of tourism, various organizations such as airlines, hotels, travel organizers, etc. have segregated tourists based on their purpose of visit. WTO (world tourism organization) has categorized tourists into following types:

Introduction to front office
Front office is one of the most important sections of a tourist hotel. This unit is responsible for the sale of the hotel rooms. It does the reservation and receives and registers the guest assigns the rooms and acts as a continuous source of the information of the guests during their stay at the hotel and finally collects dues for the services provided. The front office performs their jobs in the front of the visitors like the actor on stage. Most of the visitor’s impression is the first encounter with the hotel staff. The front office is the first and the last contact of the guests. So the department is termed as” image” building. It functions as the nerve center. The department also develops and maintains up – to – date database of the guests, guest information, guest services and ensures guest satisfaction.
In small hotels under the direct supervision of the owner of the management the front office is known as hotel reception. But in a big organization it includes different departments and their job is more specific and specialized.

Tourism being a service industry the image, quality, personality, efficiency etc of the staffs determines the class of the hotel. Among different departments front office is the most critical department as it is the first and last point of a costumers contact.
Role of front office staff
This department generates and collects the revenue. They receive guests, allocate rooms and other facilities and collect the payment. At the same time they motivate the guests to spend more on the hotels facilities
Front office is the nerve system. It co-ordinates different departments within a hotel and maintains good relation with external service agencies such as travel agencies, airlines etc
